Generic Recipe for Dressing
By Victoria Boutenko
Blend the following until smooth in a blender:
Oil (any good oil, such as sesame, oive, safflower). Use enough to cover the blades of a blender.
1 teaspoon honey* (or any other natural sweetener like raisins, banana)
2 Tablespoons fresh lemon juice (or lime juice or apple cider vinegar)
1/3 cup of water
1 cup chopped or 1 bunch herbs, preferably fresh (one or more of: celery, parsley, cilantro, basil, or any other)
Spice to taste (garlic, mustard, ginger, jalapeno, etc.)
1/3 cup seeds or nuts (sunflower seeds, tahini, walnuts, pumpkin seeds, almonds, etc.)
1/2 teaspoon salt (sea salt, kelp, dulce, Bragg's Liquid Aminos) or to taste or no salt at all.
Don't be afraid to improvise. You may sometimes add more liquid or skip an ingredient completely. If it tastes good, put it in!
Serves 7-10
* Honey is not considered to be vegan. Grade B Maple syrup is a nutritious alternative.
