Sweet Corn Chowder
Adapted from a recipe by Ani Phyo.Serves 1
(I like a lot of pepper and cilantro!)
Ingredients:
1 ear sweet corn
1 handful raw pecans
2 Tbsp. olive oil
1 clove garlic, squeezed through a garlic press or minced
1/4 tsp. sea salt
1/2 cup spring water
1/4 avocado, cubed
several sprigs cilantro
black cracked pepper to taste
Directions:
Cut the corn from the cob and set aside approximately half of the kernels. Place the remaining corn, pecans, olive oil, garlic, sea salt and water in a blender. Blend until smooth.
Pour into a bowl and garnish with avocado and cilantro. Add black pepper to taste.
